Celebrate the Last Days of Summer with Dinner on a Stick

Today: Don't put the grill away just yet—these honey-orange chicken skewers are calling your name.

For the past three months, we've spent every free moment ventricumbent on the beach, saving up for heirloom tomatoes, and eating as many meals as possible outside, as if September would never come—but, despite our best efforts avoiding it, it somehow snuck up on us. Before the leaves start turning shades of brown (and our take-out coffee cups red), we're making the most of the last warm nights of summer by pouring rosé and grilling up bright honey-orange chicken skewers paired with an orange juice-spiked peanut dipping sauce

Spiced Honey-Orange Chicken Skewers

Makes 12 skewers

For the base peanut sauce:

1 1/2 cups fresh orange juice
1/2 cup honey
1 tablespoon sambal oelek
1 teaspoon soy sauce
1 clove garlic, grated on a microplane or put through a garlic press
1/4 teaspoon salt

For the skewers:

1 1/4 cups base peanut sauce, divided (recipe above)
1 cup mayonnaise
1/4 cup vegetable oil
4 boneless, skinless chicken breast halves (6 to 8 ounces each)
4 metal or wood skewers (soak wood skewers in water for at least 30 minutes)
Sambal oelek, to taste (optional)
