Ramen Revisited + How to make Dashi

My parents made my lunch every day that I was in school from the time I was barely old enough to hold a brown paper bag, right up until my last days of high school. It was always exactly the same format, with slight variations: sandwich, juice box, granola bar, piece of fruit. Pretty standard […]

Chickpea Shawarma with Millet

I believe one of the biggest reasons vegetarian and vegan cooking gets a bad name is because there are a ton of flavorless meals and recipes out there. I think it’s easier with a good cut of meat to just add a bit of salt/pepper then call it good and while I feel the same [...]

wild mushroom pâté

Wild Mushroom Pâté I used a mix of mostly cremini (baby bella or brown) mushrooms, plus oyster and chanterelle. Use whatever mushrooms you can find that you like the flavor of, or, feel free to use just brown mushrooms; you’ll still get a lot of flavor. This is a flexible recipe; you’ll probably be just […]

Chez Panisse’s Famous Calzones

Before last week, I never would have described a calzone as light. Or as something that tastes like spring. Or as something I would consider serving to company, maybe sliced into rounds to reveal its oozing, cheesy goodness. Well, leave it to Chez Panisse to create that very calzone, a six-inch round of pizza dough […]

Quick Tip: Keeping Your Bar Tidy

We're back with another quick tip! Here's a trick to use less of your workspace and keep your bar tidier during your shift.

A Simple Asparagus Soup

The markets here have shifted from yellow and orange orbs of citrus to banks of green asparagus, baskets of artichokes, bouquets of green garlic, and tiny favas the size of my ring finger. There are massive tangles of purple lilac and eggs for sale in shades of cream, pale blue, and soft mocha. I've braised baby artichokes every night this week, and made this soup twice. Spring it is. Do you remember the simple carrot soup I highlighted back in January? This is the asparagus version. I trade in asparagus for the carrots, then tweak a bit depending on what I have in the kitchen. But, really, it just goes to show how you can evolve your favorite recipes as the seasons change. For lunch I reheat it, grab one of the hard-boiled eggs I try to keep on hand in the refrigerator, and then root around for something crunchy - nuts, crackers, seeds. Give it a go.

This also, happened last weekend - Quitokeeto in the Wall Street Journal - super exciting!
